Spicy Jalapeño Sesame Cauliflower Bites

Ingredients

  • 1 medium head cauliflower
  • any cooked grain
  • 3 cloves garlic, sliced
  • jalapeño slices
  • scallions
  • sesame seeds
  • oil

Batter

  • 3/4 cup all purpose flour
  • 1/2 teaspoon salt
  • dash black pepper
  • 3/4 cup water

Sauce

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce or coconut amino or tamari
  • 1 tablespoon rice vinegar
  • 1-2 tablespoons ketchup
  • 2 teaspoons brown sugar
  • 1 teaspoon maple syrup
  • 1 teaspoon sesame oil
  • 2-3 tablespoons hot water

Preparation

  1. Cut cauliflower into small florets.

  2. Whisk together the batter ingredients until no lumps appear.

  3. Prepare a deep shallow pan with oil, dip the florets in batter, shake off excess, and shallow pan fry until golden brown.

  4. Whisk together all the sauce ingredients.

  5. In a heated pan with 1 teaspoon oil, sauté garlic until fragrant.

  6. Slowly add the sauce to the pan and simmer on low-medium heat until it thickens, about 1-2 minutes.

  7. Add the fried cauliflower, jalapeño slices, scallions, and coat until well combined.

  8. Serve warm with your favorite cooked grain.
