Three Ingredient Potato Hash Pancake with Marinara Sauce

Ingredients

Potato pancake

  • 4 packed cups shredded raw potato (from 2 large potatoes, Yukon gold variety)
  • 1/2 tbsp salt
  • 2 1/2 tbsp canola oil or neutral cooking oil

Marinara sauce

  • 1 can (400g) diced tomatoes
  • 3 tbsp tomato paste
  • 2 tbsp coconut sugar or sugar of choice
  • 1 tsp salt, or to taste
  • 1 tsp dried basil
  • 2 tbsp olive oil

Preparation

  1. Process all marinara sauce ingredients in a blender until smooth

  2. Shred the potatoes

  3. Squeeze the shredded potatoes to remove excess moisture

  4. Mix the squeezed potatoes with salt and oil

  5. Form the mixture into patties of desired size and shape

  6. Heat oil in a large pan over medium heat

  7. Cook the patties until golden brown on both sides

Tips

  1. Adjust the marinara sauce to taste after blending

  2. Make potato pancakes in smaller cakes and different shapes as preferred
