Vegan Popcorn Falafel Balls

Ingredients

Falafel

  • 2 cans chickpeas
  • 1 red onion
  • Juice of 1 lemon
  • 3 cloves garlic
  • 2 tsp Harissa paste
  • 1 tsp salt
  • 1 tsp cumin
  • 1/2 tsp pepper
  • 1/2 cup flour
  • 1/4 cup coriander
  • 1/4 cup parsley

Batter

  • 1 cup plain flour
  • 1/2 cup almond milk

Crust

  • 1 cup panko breadcrumbs
  • Vegetable oil

Serving

  • Hummus
  • Salad

Preparation

  1. Put all the falafel ingredients into a food processor and blend into a thick paste.

  2. Take a spoonful of the mixture, roll it into a ball, and place on a plate. Repeat until all mixture is used.

  3. Put the batter ingredients in a mixing bowl and mix until creamy and thick.

  4. Dip a falafel ball in the batter, then roll in panko breadcrumbs for good coverage.

  5. Deep fry the balls until golden brown and crispy.

  6. Serve immediately with hummus and salad.
