Vegan Popcorn Falafel Balls
Ingredients
Falafel
- 2 cans chickpeas
- 1 red onion
- Juice of 1 lemon
- 3 cloves garlic
- 2 tsp Harissa paste
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp pepper
- 1/2 cup flour
- 1/4 cup coriander
- 1/4 cup parsley
Batter
- 1 cup plain flour
- 1/2 cup almond milk
Crust
- 1 cup panko breadcrumbs
- Vegetable oil
Serving
- Hummus
- Salad
Preparation
Put all the falafel ingredients into a food processor and blend into a thick paste.
Take a spoonful of the mixture, roll it into a ball, and place on a plate. Repeat until all mixture is used.
Put the batter ingredients in a mixing bowl and mix until creamy and thick.
Dip a falafel ball in the batter, then roll in panko breadcrumbs for good coverage.
Deep fry the balls until golden brown and crispy.
Serve immediately with hummus and salad.
