Crockpot Chicken Tacos with Pineapple Salsa

Ingredients

Chicken filling

  • 2 chicken breasts
  • 1 jar Trader Joe's salsa verde
  • approximately 1 tablespoon Simply Organic Foods harissa seasoning

Pineapple salsa

  • 1 pineapple
  • 1 large shallot
  • juice of 1 lime
  • 1-2 jalapeños
  • chile lime seasoning from Trader Joe's

Taco components

  • almond flour Siete Foods tortillas
  • avocado

Preparation

  1. Place the chicken breasts, salsa verde, and harissa seasoning in a crockpot.

  2. Cook on low for 3 to 4 hours.

  3. Shred the chicken and return it to the crockpot.

  4. Chop the pineapple, shallot, and jalapeños, then mix with lime juice and chile lime seasoning to make the salsa.

  5. Assemble the tacos by filling the tortillas with the shredded chicken mixture, pineapple salsa, and sliced avocado.
