Peach Salsa Fish Tacos

Ingredients

  • 1 red bell pepper
  • 3 small jalapeños
  • 1/3 cup red onion
  • 2 peaches
  • 1/3 cup cilantro
  • 1 lime
  • 1/2 tsp sea salt
  • 1 lb cod
  • 2-3 tbsp blackened/cajun/bbq rub

Preparation

  1. Dice all salsa ingredients and toss them in a large bowl

  2. Pat the fish dry with a paper towel and generously rub all sides with seasoning

  3. Heat a large skillet on medium-high heat and add avocado oil

  4. Once hot, add the fish, spread apart, and cook for 3 minutes per side until nicely charred

  5. Serve with your favorite taco shells and have corn chips to scoop up extra salsa

  1. This salsa pairs well with fish tacos, shrimp, chicken, or as a dip for chips
