Chili-Roasted Cauliflower and Chickpea Tacos

Ingredients

  • extra-virgin olive oil
  • chili powder
  • smoked paprika
  • ground cumin
  • cauliflower florets
  • canned chickpeas
  • tortillas
  • optional lime crema

Mango salsa

  • fresh diced mango
  • red bell pepper
  • red onion
  • fresh jalapeño
  • cilantro
  • juice of 1 lime

Preparation

  1. Preheat oven to 425°F and mix olive oil with chili powder, smoked paprika, and cumin in a bowl.

  2. Toss cauliflower florets and chickpeas in the spice mixture and spread on a baking sheet.

  3. Roast in the oven until golden and tender, about 25 to 30 minutes.

  4. In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice to make the salsa.

  5. Warm tortillas in a skillet or microwave until soft and pliable.

  6. Assemble tacos by filling warmed tortillas with roasted cauliflower and chickpeas, then top with mango salsa and optional lime crema.
