Chili-Roasted Cauliflower and Chickpea Tacos
Ingredients
- extra-virgin olive oil
- chili powder
- smoked paprika
- ground cumin
- cauliflower florets
- canned chickpeas
- tortillas
- optional lime crema
Mango salsa
- fresh diced mango
- red bell pepper
- red onion
- fresh jalapeño
- cilantro
- juice of 1 lime
Preparation
Preheat oven to 425°F and mix olive oil with chili powder, smoked paprika, and cumin in a bowl.
Toss cauliflower florets and chickpeas in the spice mixture and spread on a baking sheet.
Roast in the oven until golden and tender, about 25 to 30 minutes.
In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice to make the salsa.
Warm tortillas in a skillet or microwave until soft and pliable.
Assemble tacos by filling warmed tortillas with roasted cauliflower and chickpeas, then top with mango salsa and optional lime crema.
