Fish Tacos with Mango Salsa
Ingredients
Mango salsa
- 1 mango diced
- 1/2 red pepper diced
- 1 jalapeño diced
- 1/3 cup red onion diced
- 1/3 cup cilantro chopped
- Juice of 1 lime
- Sprinkle of sea salt
Fish
- 2 Iceland haddock fillets {or any white fish}
- 2 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp cayenne
- Salt & pepper
Simple guac
- 2 mashed avocados
- 1 garlic clove minced
- Juice of 1 lime
- Sprinkle of sea salt
Preparation
Make the salsa by combining all ingredients
Pat dry fish & rub with seasoning mix
Add @chosenfoods avocado oil to a large skillet
Once pan is hot, add fish & cook 3 mins per side
Heat tortilla shells
Assemble tacos starting with guac, fish & salsa on top
