Grilled Fish Tacos with Pineapple Salsa
Ingredients
- 1 cup diced fresh pineapple
- 1/2 red bell pepper, diced
- 1 jalapeno, diced
- 1/4 cup red onion, diced
- 1 lime, squeezed
- 1/4 tsp salt
- 2 avocados, mashed
- 2 minced garlic cloves
- 1 lime, squeezed
- 1/4 tsp salt
- Pre-mixed taco/blackening mix or 1 tsp each of smoked paprika, garlic powder, onion powder, thyme, cayenne, oregano, salt, and pepper
- Fish fillets (such as tilapia)
- Oil
- Tortillas
Preparation
Combine diced pineapple, red bell pepper, jalapeno, red onion, lime juice, and salt to make the pineapple salsa.
In another bowl, combine mashed avocados, minced garlic, lime juice, and salt to make the guac.
Use a pre-mixed taco/blackening mix to rub both sides of the fish (such as tilapia) or make your own mix with the ingredients listed.
Heat oil in a pan and cook fish on both sides for 4 minutes.
Heat up your preferred tortilla and top with guac, fish, and pineapple salsa.
