Slow Cooker Chicken Fajita Salad Prep

Ingredients

  • 2-3 pounds chicken (breasts or thighs)
  • 1/2 jar salsa verde
  • 2 tbsp taco seasoning
  • 1/4 cup of water/broth

Preparation

  1. Mix the chicken with salsa verde, taco seasoning, and water or broth in the slow cooker.

  2. Cook on low for 6-8 hours.

  3. Sauté peppers and onions in a cast iron pan.

  4. Assemble the mixture into to-go containers to complete the salad prep.

  5. Meal prep can be modified to fit your taste and time for simplicity.
