Taco Stuffed Sweet Potato with Beef and Avocado
Ingredients
- 1 sweet potato
- Peppers and onions
- Taco seasoning
- Ground beef
- 1/2 avocado
Preparation
Bake the sweet potato at 400°F for 50 minutes.
Bake peppers and onions at 400°F for 15 minutes, sprinkled with taco seasoning.
Sauté ground beef in a skillet over medium heat for about 8 minutes with taco seasoning.
Stuff the baked sweet potato with the cooked peppers, onions, and ground beef mixture.
Top with half an avocado.
