Taco Stuffed Sweet Potato with Beef and Avocado

Ingredients

  • 1 sweet potato
  • Peppers and onions
  • Taco seasoning
  • Ground beef
  • 1/2 avocado

Preparation

  1. Bake the sweet potato at 400°F for 50 minutes.

  2. Bake peppers and onions at 400°F for 15 minutes, sprinkled with taco seasoning.

  3. Sauté ground beef in a skillet over medium heat for about 8 minutes with taco seasoning.

  4. Stuff the baked sweet potato with the cooked peppers, onions, and ground beef mixture.

  5. Top with half an avocado.
