Baked Sweet Potato Nachos with Beef Toppings

Ingredients

  • 1 large sweet potato
  • 2 teaspoons olive oil
  • 2 peppers
  • 1 onion
  • 1 tablespoon taco seasoning
  • 1 pound grass-fed ground beef
  • additional taco seasoning to taste

Preparation

  1. Preheat oven to 425°F.

  2. Slice sweet potato into thin rounds and coat with 1 teaspoon olive oil; bake for 25-30 minutes.

  3. Cut up 2 peppers and 1 onion; coat with 1 teaspoon olive oil and 1 tablespoon taco seasoning; bake for 15 minutes. Optionally, move sweet potatoes to one side of the pan if space allows and add the vegetables.

  4. In a skillet, add a small amount of oil and cook 1 pound grass-fed ground beef until browned; sprinkle with taco seasoning to taste.
