Easy Shrimp Fajita Bowls with Cauliflower Rice
Ingredients
- ~1 lb shrimp
- 2 sliced peppers
- 1/2 white onion
- 2-3 tbsp taco seasoning
- 1 tbsp avocado oil
- juice of 1 lime
- 2 minced cloves garlic
- 3 cups cauliflower rice
- cilantro
- romaine lettuce
Preparation
Toss shrimp, peppers, and onion with taco seasoning, avocado oil, and juice of 1 lime.
Line a baking sheet with foil and spread the mixture evenly.
Bake at 425°F for 8-10 minutes.
While baking, sauté minced garlic and cauliflower rice in a pan over medium heat until softened.
Remove from heat and add cilantro and juice of 1 lime to the cauliflower rice mixture.
Assemble bowls with romaine lettuce, shrimp mixture, veggies, and cauliflower rice.
