Easy Shrimp Fajita Bowls with Cauliflower Rice

Ingredients

  • ~1 lb shrimp
  • 2 sliced peppers
  • 1/2 white onion
  • 2-3 tbsp taco seasoning
  • 1 tbsp avocado oil
  • juice of 1 lime
  • 2 minced cloves garlic
  • 3 cups cauliflower rice
  • cilantro
  • romaine lettuce

Preparation

  1. Toss shrimp, peppers, and onion with taco seasoning, avocado oil, and juice of 1 lime.

  2. Line a baking sheet with foil and spread the mixture evenly.

  3. Bake at 425°F for 8-10 minutes.

  4. While baking, sauté minced garlic and cauliflower rice in a pan over medium heat until softened.

  5. Remove from heat and add cilantro and juice of 1 lime to the cauliflower rice mixture.

  6. Assemble bowls with romaine lettuce, shrimp mixture, veggies, and cauliflower rice.
