Simple Sesame Salmon with Fresh Cucumber Garnish

Ingredients

  • salmon
  • 2 tbs toasted sesame oil
  • 1 tsp honey
  • juice of 1/2 clementine
  • 1/2 tsp garlic powder
  • salt
  • one English cucumber
  • one small red pepper
  • 2 tbs rice vinegar
  • juice of 1/2 lemon
  • 1/2 tsp sesame oil
  • cauliflower rice
  • 1 tsp sesame oil
  • 1 tsp vegan butter

Preparation

  1. Combine 2 tbs toasted sesame oil, 1 tsp honey, juice of 1/2 clementine, 1/2 tsp garlic powder, and a bit of salt for the salmon marinade.

  2. Brush the mixture on the salmon and cook in a pan flesh down for 6-8 minutes, depending on preference.

  3. Cut one English cucumber and one small red pepper into little squares.

  4. Add to the vegetables: 2 tbs rice vinegar, juice of 1/2 lemon, 1/2 tsp sesame oil, and salt to make the garnish.

  5. Cook the cauliflower rice in 1 tsp sesame oil and 1 tsp vegan butter, keeping it simple.
