Simple Sesame Salmon with Fresh Cucumber Garnish
Ingredients
- salmon
- 2 tbs toasted sesame oil
- 1 tsp honey
- juice of 1/2 clementine
- 1/2 tsp garlic powder
- salt
- one English cucumber
- one small red pepper
- 2 tbs rice vinegar
- juice of 1/2 lemon
- 1/2 tsp sesame oil
- cauliflower rice
- 1 tsp sesame oil
- 1 tsp vegan butter
Preparation
Combine 2 tbs toasted sesame oil, 1 tsp honey, juice of 1/2 clementine, 1/2 tsp garlic powder, and a bit of salt for the salmon marinade.
Brush the mixture on the salmon and cook in a pan flesh down for 6-8 minutes, depending on preference.
Cut one English cucumber and one small red pepper into little squares.
Add to the vegetables: 2 tbs rice vinegar, juice of 1/2 lemon, 1/2 tsp sesame oil, and salt to make the garnish.
Cook the cauliflower rice in 1 tsp sesame oil and 1 tsp vegan butter, keeping it simple.
