Taco Stuffed Peppers Ready in 20 Minutes
Ingredients
- 3 peppers
- 1 lb ground beef
- 1 onion
- 1/4 tsp chili powder
- 1/2 tsp taco seasoning
- a tiny bit of olive oil
Preparation
Preheat oven to 400F.
Cut the peppers in half and de-seed.
Spray or oil a baking sheet and add the peppers face up. Bake for 15 minutes.
While the peppers are baking, heat a skillet over medium heat and add a tiny bit of olive oil.
Dice the onion and add it to the skillet with 1/4 tsp chili powder. Sauté for a few minutes.
Add the ground beef and 1/2 tsp taco seasoning to the skillet. Sauté until browned, about 10 minutes.
Remove the peppers from the oven after 15 minutes and drain any water if necessary.
Add the beef mixture to the peppers.
Broil at 500F for 2-3 minutes to get it crispy. You can add cheese at this point too.
Serve with optional toppings like avocado, jalapeño, salsa, or sour cream. They reheat well by broiling to avoid sogginess.
