Instant Pot Healthy Pumpkin Chili
Ingredients
- 1 pound ground beef
- Oil, as needed
- Salt, to taste
- Pepper, to taste
- 1 onion, diced
- 2 peppers, diced
- 1 (15-ounce) can pumpkin
- 1 (15-ounce) can black beans
- 1 (15-ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 3 cups chicken broth
- 1/2 teaspoon pumpkin pie spice
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
Preparation
Turn the pressure cooker to sauté mode.
Add a little oil and brown 1 pound of ground beef seasoned with salt and pepper, then drain and remove it.
Add the diced onion and diced peppers, sauté for 2-3 minutes, then turn off the sauté function.
Add the pumpkin, black beans, diced tomatoes, tomato paste, chicken broth, pumpkin pie spice, chili powder, cumin, paprika, and the cooked ground beef.
Stir everything together well.
Lock the lid on the pressure cooker and cook on high pressure for 10 minutes.
Allow it to sit for 5 minutes, then perform a quick release.
