Hearty Vegan Black Bean Chili
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno pepper, seeded and minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Preparation
Heat olive oil in a large pot over medium heat
Add onion, garlic, bell pepper, and jalapeno; sauté until softened
Stir in cumin, chili powder, and smoked paprika; cook for 1 minute
Add black beans, diced tomatoes, and vegetable broth; bring to a simmer
Reduce heat and simmer for 20-30 minutes to blend flavors
Season with salt and pepper to taste
Serve hot, garnished with fresh cilantro
