Hearty Vegan Black Bean Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Preparation

  1. Heat olive oil in a large pot over medium heat

  2. Add onion, garlic, bell pepper, and jalapeno; sauté until softened

  3. Stir in cumin, chili powder, and smoked paprika; cook for 1 minute

  4. Add black beans, diced tomatoes, and vegetable broth; bring to a simmer

  5. Reduce heat and simmer for 20-30 minutes to blend flavors

  6. Season with salt and pepper to taste

  7. Serve hot, garnished with fresh cilantro
