Flavorful Pumpkin Chili

Ingredients

  • 1 lb ground beef
  • 1 onion
  • 2 bell peppers
  • 1 15-ounce can pumpkin
  • 1 15-ounce can black beans
  • 1 15-ounce can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 1/2 cups chicken bone broth or regular broth
  • 1/2 teaspoon pumpkin pie spice
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste

Preparation

  1. Turn on your pressure cooker to the sauté function.

  2. Add a little oil and brown the ground beef with a sprinkle of salt and pepper. Sauté until browned.

  3. Drain and remove the ground beef.

  4. Add the diced onion and peppers to the pressure cooker. Sauté for 2-3 minutes, then turn off the sauté function.

  5. Add the pumpkin, black beans, diced tomatoes, tomato paste, chicken broth, and spices to the pressure cooker. Stir well to combine.

  6. Lock the lid in place and set the pressure cooker to cook on high pressure for 10 minutes.

  7. Allow the pressure to naturally release for 5 minutes, then perform a quick release.

  8. Adjust the seasoning with salt to taste.

  9. Serve the flavorful pumpkin chili in big bowls and enjoy!
