Easy Quinoa Stuffed Sweet Potatoes
Ingredients
- 3 medium sweet potatoes
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon taco seasoning
- 1.5 cups cooked quinoa
- 0.5 cup black beans
- 0.5 cup corn
- 0.5 cup salsa
- 2 teaspoons taco seasoning
- 1 teaspoon chili powder
- A little oil for sautéing
- Mashed avocado, optional
Preparation
Preheat oven to 400°F
Add 3 medium sweet potatoes to a pan and bake for 45-60 minutes depending on size until they are soft and slightly caramelized
While the sweet potatoes cook, make quinoa according to package instructions
Heat a skillet over medium heat, add a little oil, then add 1 diced onion and 1 diced pepper
Sprinkle with 1 teaspoon taco seasoning and sauté for 4-5 minutes
Add 1.5 cups cooked quinoa, 0.5 cup black beans, 0.5 cup corn, 0.5 cup salsa, 2 teaspoons taco seasoning, and 1 teaspoon chili powder
Mix everything together and cook for 5-7 minutes
When the sweet potatoes are done, slice in half and mash the flesh slightly
Load with the quinoa mixture and add mashed avocado if desired
