Easy Quinoa Stuffed Sweet Potatoes

Ingredients

  • 3 medium sweet potatoes
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon taco seasoning
  • 1.5 cups cooked quinoa
  • 0.5 cup black beans
  • 0.5 cup corn
  • 0.5 cup salsa
  • 2 teaspoons taco seasoning
  • 1 teaspoon chili powder
  • A little oil for sautéing
  • Mashed avocado, optional

Preparation

  1. Preheat oven to 400°F

  2. Add 3 medium sweet potatoes to a pan and bake for 45-60 minutes depending on size until they are soft and slightly caramelized

  3. While the sweet potatoes cook, make quinoa according to package instructions

  4. Heat a skillet over medium heat, add a little oil, then add 1 diced onion and 1 diced pepper

  5. Sprinkle with 1 teaspoon taco seasoning and sauté for 4-5 minutes

  6. Add 1.5 cups cooked quinoa, 0.5 cup black beans, 0.5 cup corn, 0.5 cup salsa, 2 teaspoons taco seasoning, and 1 teaspoon chili powder

  7. Mix everything together and cook for 5-7 minutes

  8. When the sweet potatoes are done, slice in half and mash the flesh slightly

  9. Load with the quinoa mixture and add mashed avocado if desired
