Quinoa Stuffed Sweet Potatoes

Ingredients

  • 3 medium/large sweet potatoes
  • 1 1/2 cup cooked quinoa
  • 2 Tbsp dried cranberries
  • 2 Tbsp pecans
  • 2 Tbsp pepitas
  • 1/4 tsp salt & pepper
  • 1/2 cup chickpeas (optional)

Preparation

  1. Scrub and wash the sweet potatoes.

  2. Pierce the sweet potatoes with a fork and bake at 400°F (200°C) for about 40-50 minutes, or microwave them on high for 5-7 minutes until soft.

  3. In a large bowl, combine the cooked quinoa, dried cranberries, pecans, pepitas, salt, and pepper. You can also add the optional chickpeas.

  4. Once the sweet potatoes are cooked and softened, cut them open lengthwise and fluff the insides with a fork.

  5. Stuff the sweet potatoes with the quinoa mixture, pressing it gently into the flesh.

  6. Drizzle your favorite dressing over the stuffed sweet potatoes. The recipe suggests using creamy garlic tahini dressing.

  7. Serve and enjoy!
