Nutritious Stuffed Sweet Potatoes

Ingredients

  • 3 medium/large sweet potatoes
  • 1 1/2 cups cooked quinoa
  • 2 tablespoons dried cranberries
  • 2 tablespoons pecans
  • 2 tablespoons pepitas (pumpkin seeds)
  • 1/4 teaspoon salt & pepper
  • 1/2 cup chickpeas (optional)
  • Creamy garlic tahini dressing (for drizzling)

Preparation

  1. Scrub and wash the sweet potatoes. Pierce each potato and bake at 400°F (200°C) for about 40-50 minutes, or microwave them on high for 5-7 minutes until soft.

  2. In a large bowl, combine cooked quinoa, pecans, dried cranberries, pepitas, salt, pepper, and optional chickpeas (or white beans).

  3. Stuff the cooked sweet potatoes with the quinoa mixture.

  4. Drizzle your favorite dressing over the stuffed sweet potatoes, such as creamy garlic tahini dressing.
