Autumn Stuffed Sweet Potatoes with Quinoa

Ingredients

  • 3 medium/large sweet potatoes
  • 1 1/2 cup cooked quinoa
  • 2 Tbsp dried cranberries
  • 2 Tbsp pecans
  • 2 Tbsp pepitas
  • 1/4 tsp salt and pepper
  • 1/2 cup chickpeas, optional

Preparation

  1. Scrub and wash your sweet potatoes.

  2. Pierce your potato and microwave it on high for 5-7 minutes or until soft.

  3. In a large bowl combine your grain, such as quinoa or rice.

  4. Add the pecans, dried cranberries, pumpkin seeds, salt, pepper, and mix.

  5. You can also add plant protein like chickpeas or white beans if desired.

  6. Stuff sweet potatoes with the mixture.

  7. Drizzle with your favorite dressing and serve.

Tips

  1. A creamy garlic tahini dressing works well for drizzling.
