Breakfast Skillet with Sweet Potatoes and Black Beans
Ingredients
- sweet potato cubes
- 1/2 small onion, chopped
- black beans
- avocado
- egg (optional)
- taco seasoning
- cilantro
- corn tortillas
Preparation
In a small pan, heat up some avocado oil and sautee the onions until fragrant.
Add in the sweet potatoes, black beans, and taco seasoning and toss until warm.
Add an egg if desired and cook until whites are firm but yolk is still soft.
Turn off heat and remove from stove.
Top with avocado slices, fresh cilantro, and some crushed red pepper.
Heat up some corn tortillas in the oven and enjoy the meal right out of the skillet. This keeps the food warm and reduces dishes to wash.
