Quick and Easy Jackfruit Tacos Meal

Ingredients

  • 1 large can of jackfruit
  • 1 Tsp garlic powder or minced garlic
  • 1 Tbsp liquid aminos, tamari or soy sauce (low sodium preferred)
  • 1 Tsp taco seasoning
  • 8-10 corn tortillas
  • 1 Tbsp Avocado oil
  • 1 can of black beans
  • Cilantro to taste
  • 1 avocado
  • salsa of choice
  • lime wedges

Preparation

  1. Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels.

  2. Turn pan on medium/high heat, add avocado oil and garlic. Sauté for about 30 seconds.

  3. Add jackfruit to the pan along with some taco seasoning and liquid aminos or tamari. Sauté for about 10-15 minutes until golden brown. Add little more oil if you need to.

  4. Warm up tortillas on a skillet, add toppings and assemble your taco.

No cook method

  1. Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels.

  2. Add liquid aminos/Tamari/soy sauce into a bowl along with the juice of 1 large lime, taco seasoning and jackfruit. Mix it in so jackfruit is well marinated.

  3. Marinate jackfruit for at least 1 hour or overnight for best results. Warm-up jackfruit in microwave for at least 1-2 minutes before serving.

  4. Warm-up tortillas in microwave for 15 seconds on each side and add jackfruit and toppings.
