Easy Vegan Burrito Bowls with Jackfruit

Ingredients

  • 1 large can of jackfruit
  • 2 tbsp liquid aminos, tamari or soy sauce
  • 1 tsp taco seasoning
  • 1 large lime
  • 1 can black beans
  • 1 can corn kernels
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 avocado
  • 1 TJ’s frozen brown rice bag
  • Cilantro to taste
  • Salt and pepper to taste

Preparation

  1. Open cans of jackfruit, beans, and corn, drain and rinse them. Shred the jackfruit and dry it with paper towels.

  2. In a bowl, combine liquid aminos, tamari or soy sauce, juice of one large lime, taco seasoning, and the jackfruit. Mix well to marinate.

  3. Marinate the jackfruit for at least 10 minutes or overnight. If preferred warm, heat in microwave for at least 1 minute.

  4. Heat the frozen rice in the microwave for 4 minutes. Meanwhile, dice the bell peppers and avocado.

  5. Assemble all ingredients in a bowl and serve with hot sauce or salsa.

Tips

  1. Most preparation can be done without a stove by using canned and frozen items.

  2. Substitute frozen rice with mixed greens or shredded lettuce to make it a burrito salad.
