Whole30 Cauliflower Rice Breakfast Skillet

Ingredients

  • 2 Goldenhen Free Range Large Grade A Brown Eggs
  • 1 packet of ALDI Season’s Choice Riced Cauliflower
  • 1 bell pepper
  • 1/2 onion
  • 1 cup mushrooms
  • 1/2 tbsp Simple Nature Organic Avocado Oil
  • 1/2 avocado
  • Pinch of red pepper flakes, pepper, and sea salt
  • Cilantro

Preparation

  1. Thaw the cauliflower rice by microwaving it in a safe bowl for 3 minutes.

  2. Heat a skillet over medium heat.

  3. Chop the pepper, onion, and mushrooms.

  4. Add the oil and chopped veggies to the skillet and sauté for about 5 minutes.

  5. Add the cauliflower rice and a little sea salt and pepper.

  6. Sauté for about 3-4 more minutes.

  7. Remove some of the cauliflower rice and put it in a separate container for later.

  8. Make little holes for the eggs and crack them in.

  9. Cook uncovered until the eggs are done, about 5 minutes.

  10. Serve with cilantro and avocado.
