Loaded Savory Sweet Potato Toasts Breakfast
Ingredients
- 2 slices Japanese sweet potato
- 1/2 avocado
- Red pepper flakes
- Spinach
- Mushrooms
- Avocado oil
- Feta
Preparation
Bake the Japanese sweet potato at 400F for 40 minutes.
Sauté spinach and mushrooms in a little avocado oil.
Mash 1/2 avocado with red pepper flakes.
Slice the baked sweet potato.
Top the slices with mashed avocado, sautéed vegetables, and feta.
Optionally, warm the toasts in a toaster if desired.
