Loaded Savory Sweet Potato Toasts Breakfast

Ingredients

  • 2 slices Japanese sweet potato
  • 1/2 avocado
  • Red pepper flakes
  • Spinach
  • Mushrooms
  • Avocado oil
  • Feta

Preparation

  1. Bake the Japanese sweet potato at 400F for 40 minutes.

  2. Sauté spinach and mushrooms in a little avocado oil.

  3. Mash 1/2 avocado with red pepper flakes.

  4. Slice the baked sweet potato.

  5. Top the slices with mashed avocado, sautéed vegetables, and feta.

  6. Optionally, warm the toasts in a toaster if desired.
