Sweet Potato Mini Toasts
Ingredients
- 1 Japanese sweet potato
- 1 avocado
- Red pepper flakes to taste
- Everything but the bagel seasoning to taste
- Blackberry jam (2 ingredients, recipe not provided)
- Cashew butter
- Honey (optional, omit for plant-based)
Preparation
Slice the Japanese sweet potato into rounds.
Prepare by either baking at 400°F for 20 minutes on each side or broiling on the bottom shelf for 10 minutes.
Mash the avocado with red pepper flakes and everything but the bagel seasoning.
Top the cooked sweet potato slices with the mashed avocado mixture, blackberry jam, and cashew butter with honey if desired.
