Kebab Nourish Bowl with Peanut Dressing

Ingredients

  • 1 pack likemeat kebab pieces
  • a little oil for frying
  • 1 avocado
  • a handful of cherry tomatoes, halved
  • 50g broccoli
  • 50g bulgur wheat
  • 1/2 tin black beans, drained
  • 1 tablespoon sesame seeds
  • pickled onions

Dressing

  • 1 tablespoon smooth peanut butter
  • 1 tablespoon tamari soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • juice of 1 lime
  • a little water

Preparation

  1. Fry the likemeat kebab pieces in a little oil. In the meantime steam the broccoli and cook the bulgur wheat.

  2. Whisk all dressing ingredients in a small jug until smooth. Add enough water to get a pourable consistency.

  3. Assemble your bowls. Divide the beans, broccoli, bulgur wheat, tomatoes and avocado between 2 bowls, then add your kebab pieces on top and drizzle with the peanut dressing.

  4. Sprinkle with some sesame seeds and serve with some pickled onion and a fresh lime wedge.
