Kebab Nourish Bowl with Peanut Dressing
Ingredients
- 1 pack likemeat kebab pieces
- a little oil for frying
- 1 avocado
- a handful of cherry tomatoes, halved
- 50g broccoli
- 50g bulgur wheat
- 1/2 tin black beans, drained
- 1 tablespoon sesame seeds
- pickled onions
Dressing
- 1 tablespoon smooth peanut butter
- 1 tablespoon tamari soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon ground ginger
- juice of 1 lime
- a little water
Preparation
Fry the likemeat kebab pieces in a little oil. In the meantime steam the broccoli and cook the bulgur wheat.
Whisk all dressing ingredients in a small jug until smooth. Add enough water to get a pourable consistency.
Assemble your bowls. Divide the beans, broccoli, bulgur wheat, tomatoes and avocado between 2 bowls, then add your kebab pieces on top and drizzle with the peanut dressing.
Sprinkle with some sesame seeds and serve with some pickled onion and a fresh lime wedge.
