Miso-Roasted Eggplant Dish
Ingredients
- eggplant
- olive oil
Miso sauce
- miso
- mirin
- sake
- sugar
- water
Preparation
Preheat oven to 200°C
Cube the eggplant
Toss the cubed eggplant in olive oil.
Roast for 20 minutes.
Mix miso, mirin, sake, sugar, and water to make the sauce
Pour the miso sauce over the eggplant.
Roast for another 10-15 minutes until caramelized.
