Stir-Fried Black Bean Tofu with Fresh Vegetables

Ingredients

  • 2 blocks firm tofu
  • 1 tbsp Chinese-style fermented black beans
  • 2 tbsp oil
  • Onions
  • Onion leeks
  • Bell pepper
  • 1 tbsp soy sauce + 1 tbsp water
  • 1 tbsp cornstarch + 1 tbsp water

Preparation

  1. Dry the tofu by wrapping in paper towels and pressing with a flat surface to remove excess liquid

  2. Slice the tofu into cubes or desired shape

  3. Heat a non-stick pan and add oil. Pan-fry the tofu cubes until crisp and lightly browned on all sides. Set aside

  4. Add oil to the pan and sauté the onions, onion leeks, and bell peppers. Add the black beans and mix

  5. Add the tofu and season with the soy sauce mixture

  6. Add the cornstarch mixture and sauté until the sauce thickens, about 2 minutes. Turn off the heat
