4-Ingredient Vegan Cauliflower Pops

Ingredients

  • 650g cauliflower florets (from 2 medium heads)
  • 3 cloves garlic, minced
  • 1 tsp salt, or to taste
  • 1/2 cup all-purpose flour

For serving

  • Chopped basil
  • Tomato ketchup or favorite dipping sauce

For frying

  • Canola oil or other neutral oil

Preparation

  1. Steam or boil the cauliflower florets until cooked through.

  2. Process until it turns into a very fine consistency, almost like mashed potato.

  3. Transfer the mixture to a bowl.

  4. Add the minced garlic, salt, and flour and mix well.

  5. Scoop about 1/2 tablespoon of the mixture and form into small balls.

  6. Heat oil in a frying pan.

  7. Once hot, add the balls and cook in batches if necessary until golden brown and crisp on all sides.

  8. Remove from pan and drain excess oil on a strainer.

  9. Turn off heat after all balls are cooked.

  10. Garnish with chopped basil if desired.

  11. Serve with your favorite dipping sauce.

Baking option

  1. Heat oven to 350F.

  2. Place balls on a baking tray lined with parchment paper.

  3. Brush the balls with some oil.

  4. Bake for 40-45 minutes, flipping halfway through, or until brown on each side.
