Baked Sweet Potato Coins with Marshmallows
Ingredients
- 1 extra large sweet potato
- 1 tbsp butter or coconut oil
- 1 tbsp brown sugar or sugar of choice
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- Mini marshmallows
Preparation
Slice sweet potato into coins about 1/4 inch thick and toss with butter, sugar, cinnamon and vanilla
Bake at 400 degrees for 30-35 minutes
Top with mini marshmallows and broil for 1-3 minutes, keeping a close eye to avoid burning
