Baked Sweet Potato Coins with Marshmallows

Ingredients

  • 1 extra large sweet potato
  • 1 tbsp butter or coconut oil
  • 1 tbsp brown sugar or sugar of choice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • Mini marshmallows

Preparation

  1. Slice sweet potato into coins about 1/4 inch thick and toss with butter, sugar, cinnamon and vanilla

  2. Bake at 400 degrees for 30-35 minutes

  3. Top with mini marshmallows and broil for 1-3 minutes, keeping a close eye to avoid burning
