Easy Brown Lentil Salad Dish
Ingredients
- 2 cups brown lentils
- 20 small tomatoes
- 1 cup chopped parsley
- 2 green onions chopped with green leaves
- 1 head lettuce, chopped
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon salt
- 2 teaspoons cumin
- 1/2 teaspoon black pepper
- 200 grams akawi cheese
- 2 teaspoons za'atar with sesame
Preparation
In a pot, place the lentils and cover with water, cover the pot and leave on medium heat until cooked. Drain the lentils from the cooking water and put in the fridge until cold.
Place the lentils in a bowl, add the cumin, salt, black pepper, lemon juice, parsley, green onion.
Add olive oil, mix the ingredients together to blend the flavors.
In a plate, place the chopped lettuce, put the lentils on top.
Cut the cheese into rectangular pieces or cubes, spread them over the lentils.
Cut the tomatoes as desired then spread them over the salad.
Sprinkle the za'atar over the salad then garnish with some parsley and serve.
Tips
You can prepare the lentils in advance a few hours or a day before.
