Vegetable Salad with Parmesan Cheese Sauce
Ingredients
Cheese sauce
- 1/3 cup grated Parmesan cheese
- 3 tablespoons olive oil
- 2 tablespoons white grape vinegar
- 1/2 teaspoon minced garlic
- 1/2 teaspoon mustard paste
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Salad
- 1 small head chopped lettuce
- 2 large chopped tomatoes
- 1 green onion chopped
- 1 cup greens
- 1/4 cup chopped mint
- 1/4 cup chopped parsley
- grated Parmesan cheese for serving
Preparation
In a blender pitcher, place the cheese, oil, vinegar, garlic, mustard, salt, and pepper. Blend on medium speed until smooth.
In a deep bowl, place the lettuce, tomatoes, onion, greens, mint, and parsley. Using a wooden spoon, toss the vegetables to mix.
Distribute the cheese sauce over the salad. Toss the salad to coat well with the sauce.
In a serving dish, pour the salad. Sprinkle cheese on top and serve.
