Vegetable Salad with Parmesan Cheese Sauce

Ingredients

Cheese sauce

  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons white grape vinegar
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon mustard paste
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Salad

  • 1 small head chopped lettuce
  • 2 large chopped tomatoes
  • 1 green onion chopped
  • 1 cup greens
  • 1/4 cup chopped mint
  • 1/4 cup chopped parsley
  • grated Parmesan cheese for serving

Preparation

  1. In a blender pitcher, place the cheese, oil, vinegar, garlic, mustard, salt, and pepper. Blend on medium speed until smooth.

  2. In a deep bowl, place the lettuce, tomatoes, onion, greens, mint, and parsley. Using a wooden spoon, toss the vegetables to mix.

  3. Distribute the cheese sauce over the salad. Toss the salad to coat well with the sauce.

  4. In a serving dish, pour the salad. Sprinkle cheese on top and serve.
