Potato Salad with Pomegranate Molasses
Ingredients
- 4 large potatoes
- 1/2 cup pomegranate molasses
- 1/2 cup olive oil
- 5 cloves garlic, crushed
- 1 tablespoon hot pepper, chopped
- 1 tablespoon coriander
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups parsley, chopped
Preparation
Peel the potatoes, then cut them into small cubes. Place them in salted water for a few minutes. Then drain them.
In a deep skillet, heat the oil and fry the potatoes until golden brown. Let them cool.
In a bowl, place pomegranate molasses, olive oil, garlic, hot pepper, coriander, salt, pepper and mix the ingredients to combine.
Add the potatoes and mix well to absorb the sauce.
Add the parsley and mix before serving immediately.
Place in a serving dish and serve immediately.
