Lemon Mint Potatoes and Peas
Ingredients
- 500 grams small potatoes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh peas
- 2 tablespoons soft butter
- 1 teaspoon lemon zest
- 2 teaspoons lemon juice
- 2 tablespoons chopped green mint
Preparation
Peel the potatoes and cut each one in half.
In a deep pot, add a generous amount of water. Add a tablespoon of salt and place the pot on medium heat to bring to a strong boil.
Add the potatoes and cook for 12 minutes on medium heat.
Add the peas and cook for an additional 5 minutes.
Drain the potatoes and peas and transfer to a serving dish.
Add the salt, pepper, butter, lemon zest, lemon juice, and mint. Gently stir until the butter melts and the vegetables absorb the lemon flavor.
Serve with grilled meats or fried fish.
