Chicken Salad with Curry Dressing
Ingredients
- 3 chicken fillets
- 2 bay leaves
- 10 whole black peppercorns
- 1 small onion
- 1/4 teaspoon salt
Dressing
- 1 cup mayonnaise
- 2 tablespoons mustard paste
- 2 tablespoons liquid hot sauce
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1 teaspoon paprika
- 2 chopped green onions
- 1/2 head thinly sliced red cabbage
- 2 chopped green bell peppers
- 1 thinly sliced sweet red pepper
- 1/4 cup cashews
- 1/4 cup raisins
- 1 cup fresh cilantro or parsley
- 1 cup pomegranate seeds
For serving

Preparation
Boil the chicken with bay leaves, black peppercorns, onion, and salt until fully cooked and tender.
Remove the chicken from the heat, allow it to cool, and then shred or chop it into bite-sized pieces.
In a large mixing bowl, combine all the dressing ingredients and stir until well blended.
Add the chopped chicken to the dressing mixture and toss to ensure even coating.
Arrange the salad on a bed of lettuce and serve immediately.
