Vegetable Salad with Parmesan Dressing
Ingredients
Cheese sauce
- 1/3 cup finely grated Parmesan cheese
- 3 tablespoons olive oil
- 2 tablespoons white grape vinegar
- 1/2 teaspoon minced garlic
- 1/2 teaspoon mustard paste
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Salad
- 1 small head chopped lettuce
- 2 large chopped tomatoes
- 1 chopped green onion
- 1 cup greens
- 1/4 cup chopped mint
- 1/4 cup chopped parsley
For serving
- Grated Parmesan cheese
Preparation
In a blender, place the cheese, oil, vinegar, garlic, mustard, salt, and pepper and blend on medium speed until smooth to make the cheese sauce.
In a deep bowl, place the lettuce, tomatoes, onion, greens, mint, and parsley and use a wooden spoon to mix the vegetables to form the salad.
Pour the cheese sauce over the salad and mix well to coat.
Serve the salad in a deep serving dish, sprinkle with grated cheese, and present.
