Vegetable Salad with Parmesan Dressing

Ingredients

Cheese sauce

  • 1/3 cup finely grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons white grape vinegar
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon mustard paste
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Salad

  • 1 small head chopped lettuce
  • 2 large chopped tomatoes
  • 1 chopped green onion
  • 1 cup greens
  • 1/4 cup chopped mint
  • 1/4 cup chopped parsley

For serving

  • Grated Parmesan cheese

Preparation

  1. In a blender, place the cheese, oil, vinegar, garlic, mustard, salt, and pepper and blend on medium speed until smooth to make the cheese sauce.

  2. In a deep bowl, place the lettuce, tomatoes, onion, greens, mint, and parsley and use a wooden spoon to mix the vegetables to form the salad.

  3. Pour the cheese sauce over the salad and mix well to coat.

  4. Serve the salad in a deep serving dish, sprinkle with grated cheese, and present.
