Healthy Broccoli Salad with Lemon Dressing

Ingredients

  • 1 head broccoli
  • 1 large carrot
  • 1 large zucchini
  • 2 green onions
  • 4 garlic cloves
  • 1 small onion
  • 1 inch ginger
  • 1 green bell pepper
  • 1 cup cilantro or parsley
  • 1 avocado
  • 1/2 cup lemon juice
  • 1 cup basil leaves
  • 1/4 cup walnuts
  • 1/4 cup cashews
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Garnish

Preparation

  1. Chop the broccoli, carrot, zucchini, green onions, onion, bell pepper, cilantro or parsley, and basil into bite-sized pieces.

  2. Mince the garlic and ginger.

  3. In a large bowl, combine all the chopped vegetables, herbs, avocado, walnuts, and cashews.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.

  5. Pour the dressing over the salad mixture and toss well to coat.

  6. Garnish with chips before serving.
