Easy Crunchy Baked Chickpea Snack

Ingredients

  • 1 15oz can garbanzo beans (chickpeas)
  • 1 tbsp honey
  • 1/2 tbsp oil
  • 1/2 tsp salt
  • 1 tsp cinnamon

Preparation

  1. Preheat oven to 375F and line a baking sheet with parchment paper

  2. Rinse and use a towel to gently dry the chickpeas. Place them on the baking sheet. Bake for 20 minutes (tossing halfway through)

  3. Mix the other ingredients in a bowl, toss the chickpeas to coat after they’ve baked for 20 minutes, then return them to the oven for another 10-15 minutes until crunchy

  4. Remove from oven and let cool on the baking sheet for a few minutes before munching

Tips

  1. This snack is a cheaper alternative to store-bought seasoned chickpeas and contains no artificial additives

  2. It provides a balanced mix of protein, fat, carbs, and fiber, making it ideal for meal prepping
