Fluffy Gluten-Free Cinnamon Biscuits

Ingredients

  • 2 cups oat flour
  • 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 eggs
  • 1/4 cup honey
  • 2 tbsp. oil

Preparation

  1. Preheat oven to 350F and spray or line a baking sheet.

  2. In a large bowl, whisk together the dry ingredients.

  3. In a small bowl, whisk together the wet ingredients.

  4. Pour the wet ingredients into the dry and stir until well combined.

  5. Let the dough sit for about 5 minutes to thicken.

  6. Use two spoons to drop about 1/4 cup of dough per biscuit onto the baking sheet, making 6 biscuits.

  7. Bake for 10 minutes, then place on a cooling rack and top with avocado, butter, jam, nut butter, or similar.
