Easy Vegan Tofu Potstickers
Ingredients
- 1 pack round gyoza wrappers
- 14 oz firm tofu
- 8 oz Bella mushrooms
- 2 tablespoons minced ginger
- 1/2 yellow onion
- 2 cloves garlic
- 2 tablespoons soy sauce
- 2 handfuls fresh spinach
- Chopped cilantro
Preparation
Crumble tofu into a hot pan and cook until water is gone.
Add all ingredients except spinach and cook until no water remains.
Add spinach and cook until wilted, then mix in chopped cilantro.
Remove from heat and let cool.
Place 1 heaping tablespoon of filling into a gyoza wrapper.
Wet one edge of the wrapper.
Shape by folding and pressing into ruffles and set on a parchment-lined baking sheet while shaping the rest.
Heat a non-stick pan over high heat with a drizzle of oil.
Place shaped potstickers in the pan with about 1 inch between them and fry for 30 seconds.
Cover the pan with a 1-inch crack, pour in 1/4 cup water, and cover immediately to avoid splatter.
Cook for 5 minutes or until water is gone, then serve immediately.
Tips
Garnish with toasted sesame seeds and chili oil for extra flavor.
