Elote Hot Dogs

Ingredients

  • 8 jumbo hot dogs
  • 8 hot dog buns

Elote

  • 1 package frozen roasted corn (thawed)
  • 1/3 cup white onion, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 tbsp chili powder
  • 1/2 cup cotija cheese

Spicy lime aioli

  • 1/4 cup mayonnaise
  • juice of 1 lime
  • pinch of salt
  • 1/2 tsp chipotle powder
  • 1 tsp garlic powder

Preparation

  1. Cook the hot dogs according to package instructions.

  2. Thaw the corn either on the stovetop or in the microwave. You can also roast your own corn if preferred.

  3. Add the corn, chopped onion, cilantro, cotija cheese, and chili powder to a medium-sized bowl.

  4. Stir to combine.

  5. In a small bowl, add the spicy lime aioli ingredients and whisk until smooth.

  6. Assemble the hot dogs and top with the elote mixture and spicy aioli.

  7. Enjoy. This recipe makes 8 servings.
