Creamy Pea and Mint Guacamole

Ingredients

  • 1/2 cup frozen peas, slightly thawed
  • 1 medium avocado, peeled, pitted and chopped
  • Juice from 1 lime
  • Black pepper to taste
  • 1 tablespoon fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1-2 teaspoons garlic powder
  • 1/2 teaspoon sea salt

Preparation

  1. Bring a medium pot of water to a boil and prepare a bowl with water and ice. Plunge peas into the boiling water and cook until al dente. Drain peas and immediately transfer them to the ice bath. Drain.

  2. In a large bowl, add the avocado and mash with a fork. Add the lime juice and salt and mix well.

  3. Next, add the peas and mash until creamy.

  4. Add lime, black pepper, salt to taste, and garlic powder. Mix well.

  5. Next, add cilantro and mint, mix once more, and refrigerate for a few minutes before serving.

Notes

  1. This guacamole is simple and incredibly delicious, and it can be eaten every day.
