Extra Creamy Vegan Hummus

Ingredients

  • 2 cans organic chickpeas
  • chickpea juice (reserved from can)
  • 1 cup tahini
  • juice of 1 large lemon
  • 3-4 garlic cloves
  • 1-2 teaspoons salt
  • 1 teaspoon pepper

Preparation

  1. Drain one can of chickpeas and reserve the liquid from the second can.

  2. Blend all ingredients together in a blender until smooth and creamy.

  3. Plate the hummus in a shallow bowl.

  4. Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

  5. Serve with warm pita bread.
