Roasted Garlic Hummus with Toppings

Ingredients

  • 2 cans organic chickpeas
  • 1/2 cup tahini
  • Juice of 1 large lemon
  • Chickpea aquafaba (reserved liquid), to adjust consistency
  • 1 whole roasted garlic, peeled
  • 1-2 teaspoons salt
  • 1 teaspoon cumin powder
  • 1 teaspoon pepper

Preparation

  1. Drain one can of chickpeas and reserve the aquafaba from the second can.

  2. Peel the roasted garlic cloves if not already done.

  3. In a high-speed blender, combine all ingredients and blend until smooth and creamy, adding more aquafaba as needed for desired consistency.

  4. Plate the hummus in a shallow bowl.

  5. Decorate with chopped purple onions, cherry tomatoes, micro greens, lemon wedges, olives, and crushed red pepper.

  6. Drizzle with extra virgin olive oil and sprinkle with sesame seeds.
