Homemade Plant-Based Snickers Bars

Ingredients

Tasty base

  • 1 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil

Peanut centre

  • 1 cup peanut butter
  • 1/2 cup maple syrup

Chocolate topping

  • 1/2 cup cacao powder
  • 1/2 cup cocoa butter
  • 1/4 cup maple syrup
  • Pinch of salt
  • 3 tbsp almond milk
  • Toasted buckwheat groats and peanuts

Preparation

  1. Get a tin ready, such as a bread tin 26 x 14 cm or a square brownie tin 20 x 20 cm, and line with foil.

  2. For the tasty base: Mix the base ingredients together, flatten into the tin, smooth the top with a spatula, and pop in the freezer.

  3. For the crunchy peanut centre: Mix the peanut centre ingredients in a bowl, take the base from the freezer, spread evenly over the top, and place back in the freezer.

  4. For the perfect chocolate topping: Place the chocolate topping ingredients into a pan, melt on low heat while stirring until combined, allow to cool, then take the tin out of the freezer, spread the chocolate coating over the top, sprinkle with toasted buckwheat groats and peanuts, and place back in the freezer for 1 hour.

  5. Remove from the freezer and let sit for 5-10 minutes, remove the foil, and cut into slices or squares.

  6. Store the bars in the fridge for immediate use or in the freezer for later, defrosting for 5-10 minutes before eating.

  7. You can swap out the peanuts for almonds if preferred.
