Homemade Vegan Gnocchi with Fajita Sauce
Ingredients
Gnocchi
- two small sweet potatoes and three medium white potatoes
- 2 cups plain flour
Sauce
- 1 onion
- 1 pepper
- 2 garlic cloves
- 2 tins beans
- 4 tbsp fajita spice
- 1 tsp mixed herbs
- 1 tsp black pepper
- 1 tin chopped tomatoes
- 1/2 cup plant milk
Preparation
Pierce the skin of the potatoes and bake in the oven until soft. If impatient, microwave for five minutes first.
Once the potatoes are soft, scoop out the flesh and mash until smooth.
Pour two cups of plain flour onto the worktop and make a hole in the middle. Add the potato and fold into the flour until a dough forms. If sticky, add more flour.
Cut the dough into 8 pieces and roll each into a sausage shape roughly 1 inch thick. If sticky, roll in flour.
Cut each sausage shape into small chunks and ensure they are not sticky.
Using a fork, lightly press each gnocchi.
Boil a pan of water. Add the gnocchi, stir regularly to prevent sticking, and remove when they float to the surface after an additional 30 seconds. Add to sauce and mix.
Sauce method
Add the vegetables to a frying pan and cook for five minutes.
Add the beans and spices to the pan, stir, and cook for another two minutes.
Add the remaining ingredients and simmer on a low-medium heat while the pasta is cooking.
Optional: add some chopped spinach before serving.
