A Tomato and Sausage Cous Cous Dish

Ingredients

  • 1 onion, chopped
  • 1 pepper, chopped
  • 1 courgette, chopped
  • 2 garlic gloves, chopped
  • 1 tin chopped tomatoes
  • 1 tin baked beans
  • 150g cous cous (I ended up using a tomato cous cous packet as that’s all I had)
  • 1 tsp chilli flakes
  • 1/2 tsp chill powder
  • 1 tsp mixed herbs
  • Black pepper to taste
  • 1 pack sausages (I used Linda McCartney ones)

Preparation

  1. Add the onion, pepper and courgette to a pan and fry for five minutes

  2. Cook the sausages according to their pack instructions

  3. Add the garlic to the pan and fry for a minute

  4. Add all the remaining ingredients to the pan

  5. Add the relevant amount of water that the cous cous needs to the pan and then mix all the ingredients together. Bring the pan to the boil and then take off the heat. Leave until the water has evaporated

  6. Chop the sausages into chunks and stir into the cous cous
