Hearty Sausage Casserole with Store Cupboard Staples
Ingredients
- Packet of sausages
- Onion
- Little oil
- Grated courgette
- Mixed frozen vegetables
- Tin of chopped tomatoes
- Half a tin of water
- 2 teaspoons mixed herbs
- Garlic (optional)
- Large handful of lentils
- Black pepper
- Rice (for serving)
Preparation
Chop an onion and sauté it in a pan with a little oil.
Chop each sausage into 4 pieces and add them to the pan to brown.
Add in the vegetables, such as grated courgette and mixed frozen veg.
Add a tin of chopped tomatoes, half a tin of water, 2 teaspoons of mixed herbs, garlic if available, a large handful of lentils, and black pepper.
Simmer the mixture and serve with rice.
This dish freezes well.
