Hearty Sausage Casserole with Store Cupboard Staples

Ingredients

  • Packet of sausages
  • Onion
  • Little oil
  • Grated courgette
  • Mixed frozen vegetables
  • Tin of chopped tomatoes
  • Half a tin of water
  • 2 teaspoons mixed herbs
  • Garlic (optional)
  • Large handful of lentils
  • Black pepper
  • Rice (for serving)

Preparation

  1. Chop an onion and sauté it in a pan with a little oil.

  2. Chop each sausage into 4 pieces and add them to the pan to brown.

  3. Add in the vegetables, such as grated courgette and mixed frozen veg.

  4. Add a tin of chopped tomatoes, half a tin of water, 2 teaspoons of mixed herbs, garlic if available, a large handful of lentils, and black pepper.

  5. Simmer the mixture and serve with rice.

  6. This dish freezes well.
